Carlos Carter received his B.S. degree in Food and Nutritional Sciences at North Carolina Agricultural and Technical State University in Greensboro, NC. His undergraduate reaserach focused on factors influencing greek yogurt in acid whey production. He joined Dr. Srinivas Janaswamy's Lab in fall 2014 as an Industry Fellow in the Department of Food Science. His Master's research is on developing polysaccharide-based essential oil carriers as antimicrobial inhibitors.
