State of the Science: Slow Release Glycemic Carbohydrates and Physiologic Response

The November 18, 2009 Whistler Center for Carbohydrate Research forum was part of a USDA-funded grant entitled "Functional Foods Containing Novel Carbohydrates for Energy Balance and Improved Health" that focuses on physiologic response to slow glucose release food materials. This forum was the first of 2 forums that will be held at Purdue. The purpose of this forum is to assess the state of the science of low or slow release glycemic carbohydrates, what critical questions remain, and future prospects.
