2011 Short Course

Dates: October 10 - 12, 2011

We are proud to announce two invited instructors presented this year at our October 10-12, 2011 Short Course. Dr. Shelly J. Schmidt (Professor of Food Chemistry, University of Illinois at Urbana-Champaign) did a session on Water relations: Mechanisms, Approaches, and Applications. Professor Peter A. Williams (Glyndwr University, United Kindom) presented a Hydrocolloids as thickeners, gelling agends and emulsifers session.

Whistler Center for Carbohydrate Research offered this short course geared towards individuals who want an in-depth review or refresher course on fundamentals. This is offered as part of the benefits of membership. The 2011 short course was held October 10-12, 2011.
