Special Seminar with Dr. Stefano Renzetti

Dr. Stefano Renzetti joins us from Wageningen Food & Biobased Research in the Netherlands to highlight some of the sugar, dietary fiber, and cereal research activities being conducted by his group. Dr. Renzetti will discuss alternative protein sources and creation/utilization of food structure in food formulations (e.g., fibrous protein structure by shear-cell and 3D printing).
